The Pinnacle of Sake Craftsmanship: Elegant, Fruity, and Ultra-Smooth

"Daiginjo" represents the highest grade in the classification of Japanese sake. It requires the rice grain to be polished down to at least 50% of its original size, utilizing only the pure starchy core. This highly refined rice is then fermented slowly at low temperatures.

  • Junmai Daiginjo: Brewed using only water, rice, and koji. It offers a well-rounded body with a perfect harmony of rice umami and fruity notes.

  • Daiginjo: Contains a tiny amount of added brewer's alcohol, which helps to extract the most vibrant, expressive aromas and results in an incredibly crisp, clean finish.

Tasting Profile: Expect gorgeous "Ginjo-ka" (floral and fruity aromas) reminiscent of melon, peach, and apple, paired with a silky-smooth and incredibly clean palate.
