A Winter Miracle from the Northernmost Honshu: A Symphony of Traditional Umami and Modern Fruitiness

Located at the northernmost tip of Japan's main island, Aomori Prefecture is blessed with magnificent nature, pristine water sources like the Shirakami-Sanchi, and long, freezing winters. This pristine terroir provides the perfect backdrop for brewing sake with an exceptionally clean and pure base.

The sake styles in Aomori are incredibly diverse and exciting! It is home to the legendary "Denshu", an undisputed king of traditional Junmai sake known for its profound rice umami and rich texture. Yet, it also boasts modern superstars like "Mutsu Hassen", which captivates the younger generation with its vibrant, tropical fruit aromas and refreshing palate. You will also find unique gems like "Toyohai", brewed with the region's exclusive sake rice for beautiful complexity.

Notable Breweries: Denshu (田酒), Mutsu Hassen (陸奧八仙), Toyohai (豐盃), Hatomasamune (鳩正宗). Best Food Pairing: Aomori is famous for premium seafood like Oma tuna and scallops. The fruity and aromatic sakes are perfect chilled as an aperitif or with light appetizers. Meanwhile, the umami-driven Junmai sakes (like Denshu) are spectacular when paired with fatty tuna (Toro) sashimi, hotpots, and braised dishes. They are also phenomenal when served warm (Kan sake)!
