A common misconception among beginners is that adding brewer's alcohol means lower quality. In reality, adding a tiny, strictly regulated amount of premium distilled alcohol to the mash is a traditional, highly skilled brewing technique! It lightens the sake's body, extracts hidden aromas from the rice, and creates an incredibly crisp, clean, and dry finish.

  • Honjozo: Polished to 70% or less. It features a light body and a dry, refreshing palate. It's incredibly smooth and easy to drink all evening without feeling heavy, making it the everyday sake of choice in Japan.

  • Tokubetsu Honjozo: Requires a polishing ratio of 60% or less, or a "special" brewing method. It offers the refinement of a Ginjo while maintaining the signature crispness of a Honjozo. (The legendary "Juyondai Honmaru" belongs to this very category!)

Tasting Profile: Mild and unobtrusive aromas, a silky-smooth mouthfeel, and defined by a fantastic Kire—a sharp, clean finish that instantly refreshes the palate. Serving Suggestion: Highly versatile in temperature! It is excellent served chilled (5°C - 10°C) for maximum crispness, or warmed (Kan, 40°C - 50°C) to bring out a gentle sweetness.
