This category of sake is brewed purely with water, rice, and koji—with absolutely no added brewer's alcohol. It perfectly preserves the most authentic, rich sweetness and deep umami of the rice grain.
Junmai: There is no legally required polishing ratio, giving brewers full creative freedom. The body is typically robust and full, offering rich aromas of grain, steamed rice, or subtle earthy notes.
Tokubetsu Junmai: Requires a polishing ratio of 60% or less, or a "special" brewing method. Compared to standard Junmai, it offers a more refined, cleaner palate with richer layers of flavor.
Tasting Profile: Aromas are typically subdued and grounded. On the palate, expect a pronounced rice flavor, a pleasant lactic acidity, and a long-lasting, deeply satisfying umami finish. Serving Suggestion: This is the most versatile category when it comes to serving temperature! Enjoy it slightly chilled (10°C - 15°C) for a refreshing taste, or experience the magic of serving it at room temperature or "Kan" (warm, 40°C - 50°C).
