Description

The sake expresses a youthful vibrancy, accompanied by a delicate sweetness reminiscent of green apples. Freshness and elegance intertwine as the aroma gently expands in the nose, bringing a pleasant sensation. On the palate, acidity and the characteristic astringency of junmai sake tighten the flavor, giving the body firmness. The finish is clean and brisk, lingering with a comfortable aftertaste. With its refreshing clarity and excellent balance, this is a sake that naturally invites another pour.

On May 9, 2024, tragedy struck Mizutani Shuzo in Aisai City, Aichi Prefecture, when a fire consumed the entire brewery and its main building. The brewery’s beloved brands “Senpyo” and “Senzane,” crafted by owner Mr. Mizutani together with female brewer Ms. Miwa Goto, suddenly faced the threat of disappearance.

Determined to rise again, the brewery launched a collaborative brewing project with the support of fellow local sake makers. This sake, Senpyo Aichi no Kaori VOL.2, was born through joint brewing with Tsurumi Shuzo, a historic brewery with 150 years of tradition located in Tsushima City, Aichi.

The name “Senpyo” carries on the legacy of a brand from the late Edo period, inspired by the “Sennari Hyotan” gourd crest used by Toyotomi Hideyoshi—born in Aichi—who achieved the unification of Japan. Just as Hideyoshi’s conviction and perseverance brought him fortune, this sake embodies the hope that every cup will bring happiness and prosperity to those who drink it.
