Description

This sake has a refreshing and delightful aroma reminiscent of grapefruit and lychee, with a subtle hint of rice fragrance. It presents a clean and transparent impression. Upon tasting, it is smooth, followed by the characteristic bitterness of a new sake. The lactic acid-based acidity is also gentle, adding vibrancy and lightness to the overall palate. The aftertaste is short yet clear.

Choshu Shuzo, the brewery that produces "Tenbi," underwent a "rebirth" in Shimonoseki City, Yamaguchi Prefecture, in 2020. The company took over the brewery from Choshu Industries in 2018 and constructed a new brewery. They hired brewmaster Miki Fujioka, who had undergone training in other breweries, to start their sake production.

The core philosophy of "Tenbi" is to continuously accumulate and focus on the local environment, which is essential. Its distinguishing feature lies in its high degree of refinement. The balance of sweetness and acidity in this sake, as well as its refreshing taste, are the results of an uncompromising brewing process led by brewmaster Fujioka and the production team.
