The concept behind this sake is “Returning to Edo—envisioning the future through the eyes of the Edo period, returning to steadfast daily life.” Brewed using Yamadanishiki from Sakura City in Tochigi Prefecture, it employs the Kimoto method and is bottled as an unfiltered, unpasteurized genshu. This “Modern Shishiki” is the kijoshu version.
