This year’s release is crafted as a tribute to the standard “Mutsu Hassen Tokubetsu Junmai,” featuring a “three-day koji-making process.” By extending the koji cultivation time to 72 hours—one day longer than usual—it draws out deeper umami and acidity from the koji, resulting in an even more “special” Tokubetsu Junmai. With an alcohol content of 15%, it can be enjoyed across a wide temperature range, from chilled to warm, making it highly versatile as a food-pairing sake. It pairs well with dishes such as salmon sashimi, salt-grilled saury, braised beef, and rice dishes.

“A sake planned by brewers with an average age of 30—this is the Mixseed series!” The average age of the brewers at Mutsu Hassen is 30, and the “Mixseed” series is a project where young brewers each develop their own concept and challenge themselves in brewing. The name combines “Mix,” representing blending and harmony, and “Seed,” symbolizing seeds—expressing the idea of young brewers full of potential working together to create sake that reflects their individual visions.

“The Power of Koji brewed by Shinya Ishibashi” — In the 2025 Mixseed series, two brewers take on the challenge, one of whom is Shinya Ishibashi (45), marking his fourth attempt. His past works include “Jishaden” (2020), brewed with estate-grown Hanafubuki polished to 88%; “Digestif” (2021), created with a full-course dining concept; and “ShAKE” (2022), a rich nigori sake with 60% lees inspired by a dry, matured style.
