The aroma shows a stable, gentle ginjo profile reminiscent of green apples. Yamadanishiki’s characteristic deep umami coexists with a clean, refreshing finish. The aroma is understated yet never tires the palate. With its mellow umami-forward Houhai style, it pairs exceptionally well with food. Its versatility with a wide range of dishes makes it an excellent food sake—never overpowering, yet inviting you to enjoy glass after glass without noticing.

This sake is brewed using Yamadanishiki specially cultivated for Houhai by Nishiwaki Green Club in Hyogo Prefecture, resulting in a Junmai Ginjo with a refreshing, gentle, and finely textured mouthfeel.

The brewery is located in Hirosaki City, Aomori Prefecture, a region known for its harsh winters. Houhai is a highly popular label carefully crafted by two brothers. This bottle is a limited release from the “Junmai Ginjo 55 Series,” a lineup that uses the same brewing method while expressing differences in flavor solely through the choice of sake rice. This particular version is the fire-pasteurized Yamadanishiki 55%. The Yamadanishiki used is contract-grown specifically for Houhai by Nishiwaki Green Club in Nishiwaki City, Hyogo Prefecture, using low-pesticide farming. The rice is polished in-house to 55%, brewed with subsoil water flowing from Mount Iwaki drawn from the brewery’s own well, and pasteurized after pressing.
