The initial notes are of the aroma characteristic of well-brewed and matured sake, slightly accompanied by an elegant Ginjo fragrance reminiscent of herbs. Upon tasting, the sake showcases the delightful structure of "Isojiman" with its common acidity, the serene mouthfeel typical of matured sake, and a slight sweetness that contributes to the overall experience. The subtle feeling of low-milled rice doesn't compromise the quality of this sake.

The carefully selected rice is polished to 65% of its original size, and a three-stage process of adding koji rice is employed. The first (initial addition) and second (middle addition) stages utilize carefully selected rice, while in the third stage (final addition), "Yamada Nishiki," a rice variety from Hyogo Prefecture, is used, further enhancing the quality of the sake. The meticulously low-temperature brewing process results in a Ginjo fragrance that brings delight to both the body and mind.
