Among them, “Vol.3-2” has a light and transparent character, releasing refreshing and bright aromas reminiscent of green apple and citrus; while the simultaneously released “Vol.3-1” is softer and sweeter, carrying ricotta-like lactic notes and a rounded flavor that evokes the sensation of chewing grapes together with their skins. Only by tasting the two side by side can one appreciate their subtle and delicate differences—well worth exploring. Abe Shuzo’s recommended pairing is surprisingly okonomiyaki (Osaka-style savory pancake). Be sure to try it.
