The instantly disappearing aftertaste and the infinitely pure sake quality create a luxurious experience. After a year of low-temperature aging, its taste becomes perfected, infinitely clear. The noble aroma evokes thoughts of pears and white grapes, while the pleasant flavor reminds one of musk melon. The velvety and moist attack unfolds in the mouth like fireworks, then vanishes in an instant, leaving behind a beautiful sense of transparency and an endless lingering, resonating in layers.

In the history of Japanese sake, the lowest polishing ratio ever achieved, '7%,' was born in 2009. This brewery newly installed a rice polishing machine and aimed to explore 'how far rice could be polished.' With this idea in mind, we made continuous efforts, starting from 9% to the current 7%. This sake is dedicated to refining the brewing process by suppressing the original sake aroma produced by yeast and accentuating the original flavor of rice. As a result, it has attracted the interest of professionals, leading us to commercialize it under the name 'Zankyo 7.'
