It exudes a fresh fruit aroma reminiscent of Japanese pear and Kosui pear, with a subtle hint of melon. The palate is light and supple, with well-defined sweetness and richness, followed by a restrained touch of bitterness and tannic nuance toward the finish, which closes cleanly and crisply.

When gently warmed to a light kanzake temperature, the umami further opens up, and this approach is highly recommended. Suggested pairings include teriyaki yellowtail, mackerel simmered in miso, and braised pork seasoned with star anise.

Only the portion considered to have the most balanced flavor—the “Nakadori” middle run—is selected for bottling.
