This sake uses the Japanese sake rice "Dewa Sansan" from Yamagata Prefecture. The Kashiwakuramon area's rice was used in Yamagata City, and 100% of the Yamagata yeast YK-0107, which adds moderate acidity to enhance the flavor of chicken, was used. The hardness of the underground 100-meter well water provides a full-bodied taste to the duck meat while giving a refreshing finish to the mouthfeel.

This year, Yamakawa Mitsuo has launched a new product with the theme of collaborating with meat. The winter version is characterized by "chicken and eggs," and the name has been changed to "Yamakawa Torio" (lit. Yamakawa Chicken Man).

The label depicts Mitsuo waiting for the chicken, like catching a sparrow, while the chicken shows a carefree smile. In the current pandemic situation, the label design aims to provide people with a peaceful and enjoyable time.
