In 2023, the theme for Mr. Mitsuo Yamakawa is "Collaboration with Fermented Foods." The fourth release, "Winter (Fuyu)," is a collaboration with Yamagata's unique "pesora-tsuke," a pickled vegetable that is rich in kimchi culture.

Lately, because of the increase in weight, Mr. Yamakawa has been paying attention to his health. Although he has been researching sake pairings for healthy food, he seems to have completed a simple and delicious recipe using fermented foods.

This sake, named "Winter (Fuyu)," is the perfect sake for winter dishes! It is also suitable for warm sake.
