The light acidity from white koji adds a refreshing accent, sharpening the flavor profile, while the interplay of sweetness and crisp acidity evokes a strawberry-like impression. The finish is light, clean, and quietly fades away.

From the rising sake brand “Utashiro” brewed on Sado Island in Niigata comes the seasonal limited release “Harukaze Pasteurized.” Inspired by the transition from spring to early summer—depicting fresh greenery and intensifying sunlight—this sake uses white koji, which produces acidity, combined with a yeast that does not easily generate acid. This thoughtful brewing approach results in a beautifully balanced expression.
