“Hozomashi” is a Kumamoto heirloom sake rice variety that has been miraculously revived in recent years. It is cultivated through natural farming methods on the brewery’s own fields and by partner farmers along the Kikuchi River water system. The resulting sake releases a gorgeous aroma reminiscent of banana and pineapple, interwoven with the vital energy of the land itself and the delicate nuances created by diverse microorganisms such as yeast. These layers overlap and resonate, forming a uniquely complex flavor profile filled with a vivid sense of life.

The Twelve Stages of Agricultural Brewing “Yon-Nōjō” is produced using fertilizer-free cultivation, rooted in the brewery’s philosophy of “the indigenous production climate of the land and a spirit of prayer.” Its very origin lies in a sake brewed from the Edo-period Higo rice “Hozomashi,” making this bottle the true foundation of the series.

The Kikuchi River basin, a region with over two thousand years of rice cultivation history, is nourished by pure spring water emerging from a bedrock layer formed by the massive Aso volcanic eruption some 90,000 years ago. This historical terroir—recognized as part of Japan Heritage—has long supported both agriculture and daily life, and is the fundamental reason why Hozomashi, once praised as “the finest rice under heaven,” can flourish here.

“Hozomashi” itself is an Edo-period Higo rice variety revived in modern times. First collected in 1830 in Higo Province (present-day Kumamoto Prefecture), it was once widely cultivated throughout Kyushu, centered on Higo. By the late Edo period, it repeatedly achieved record-high prices at the Dojima Rice Exchange in Osaka, earning the title “the finest rice in the land.” However, it eventually disappeared from cultivation until 2017, when farmers in Kumamoto successfully revived it from just 40 grains of seed rice, allowing this legendary sake rice to return to the world once more.
