This sake has a higher acidity, followed by a refreshing sweetness and a rich aroma of rice. There's almost no bitterness, and the alcohol sensation is just right. The aftertaste lingers in the mouth, making it suitable for savoring slowly.

This sake combines the philosophies of Tanaka Rokugo and Senkin. It utilizes Yamada Nishiki rice from Itoshima and Senkin's traditional yeast starter, along with Tanaka Rokugo's wooden press extraction concept.

The Shiraito Sake Brewing Company sent pesticide-free Yamada Nishiki rice to Senkin as raw material for yeast starter brewing. After completing fermentation, they returned it to Shiraito Sake Brewing Company for formal brewing. Despite using non-additive yeast, the fermentation of the yeast starter proceeded smoothly. This sake presents a taste that combines Senkin's natural series with Tanaka Rokugo's brewing characteristics.
