This is an extraordinary addition to the 59 series, with a high-quality flavor and a clear aftertaste. It adheres to the highest milling standards of the 59 series, with a polishing rate of 38%, showcasing the potential of the Yamada Nishiki rice and a splendid fruit aroma. It is an excellent work of art.

This limited edition product comes from the famous rice-producing region of Minami Uonuma, Japan, and is made using traditional handmade brewing techniques for the "Takachiyo" snow country sake series. "59 Takachiyo" is an ultra-limited version of the 59 series that uses different rice varieties from all over Japan and is fermented with association yeast 1801. The flat-milling method is used to mill the rice to a polishing rate of 59%, creating a junmai daiginjo sake with no adjustments, made using Yamada Nishiki rice.

Flat-milling takes longer than traditional milling, but it can remove excess portions around the shinpaku (core), allowing more of the shinpaku to be included in the final product and creating a purer flavor. (The actual quality of the milling rate of 59% is about 50%.)
