Description
Through the use of the traditional Kimoto brewing method, this sake develops remarkable depth and complexity, while the Shingin polishing technique contributes a lighter texture and elegant grape-like fruit aromas. The result is a distinctive profile that successfully balances richness with freshness, making it particularly enjoyable during the warmer months of summer.

Shinrai is brewed by Miwa Shuzo, a historic brewery founded in 1716 during the Kyōhō era and located in Jinseki Kogen Town, surrounded by the mountains of the Chugoku Highlands in Hiroshima Prefecture. While Hiroshima sake is traditionally associated with soft-water brewing, Shinrai uniquely utilizes both mineral-rich hard water and soft water, skillfully combining different water sources to express the character of the local terroir.

This release is brewed from Hiroshima-grown Hattan Nishiki rice, polished to 72% using the innovative Shingin rice-polishing method, and fermented through the traditional Kimoto process without the addition of cultured yeast. In general, lower-polished sake tends to accumulate higher levels of amino acids, resulting in heavier flavors. However, the Shingin polishing technique significantly reduces amino acid content even at a 72% polishing ratio, challenging conventional expectations and creating a sake that is both expressive and remarkably refined.
