The winter limited release from the Shikishima brand has now arrived. This sake features the slight effervescence characteristic of freshly brewed new sake, offering a fresh and lively mouthfeel. Brewed with Gohyakumangoku rice, it expresses a sharp and precise umami together with a clean, crisp dry style. At the brewery, camellia trees—said to have been gifted by Atsuta Shrine—bloom with pink flowers from late autumn to early spring each year. The camellia’s flower language is “modest beauty.” Much like this sake, it reveals a delicate and elegant flavor within its understated character, making it an excellent brew to savor during the winter season.
