This Junmai Ginjo is characterized by its delicate grapefruit aroma, offering a clear and transparent palate where refined umami and elegant acidity intertwine to create a graceful and balanced flavor. Notes of yuzu, apricot, and grapefruit emerge on the nose, while the taste is soft and juicy, allowing the gentle sweetness and umami to bloom beautifully on the palate. The texture is smooth with a long, elegant finish. Overall, it is clean, refreshing, and harmoniously balanced between sweetness and acidity—an exquisite sake that pairs perfectly with a wide range of dishes.

About the brewery “Toraya Honten”: Founded in Tenmei 8 (1788), around the late Edo period, by an Ohmi merchant who established the brewery in Utsunomiya. Brewing began using one of Utsunomiya’s seven famous spring waters.

Guided by the philosophy of “creating sake that makes the heart flutter,” the brewery embraces the spirit of Challenge & Change, maximizing the unique characteristics of sake rice while balancing aroma, umami, and acidity to express each sake’s individuality. Toraya Honten continues to explore diverse brewing approaches, constantly pursuing “ever-evolving deliciousness” and crafting sakes that captivate the heart.
