This “Shichisui” New Year label sake is released with wishes for a prosperous and successful 2026. The year 2026 corresponds to “Hinoe Uma,” symbolizing action, success, and leaps forward. Together with its auspicious phonetic association of “everything going smoothly,” it represents a year of good fortune, achievement, and further growth. It also connects to the name “Shichisui” as the “seventh zodiac sign.”

The brewery “Toraya Honten” was founded in 1788 (Tenmei 8) by an Omi merchant in Utsunomiya, where sake was brewed using one of the region’s seven renowned water sources. Guided by the philosophy of creating “sake that moves the heart,” and embracing a spirit of “Challenge & Change,” the brewery maximizes the characteristics of the rice to achieve a balance between umami and acidity, continuously crafting diverse and evolving expressions of sake.
