Upon opening, delicate bubbles rise and gradually transform into a smooth, soft texture as time passes, offering a dynamic drinking experience. The overall flavor is rich and full-bodied, where sweetness, acidity, and umami are perfectly balanced by a refined hint of bitterness.

This unfiltered sake showcases the deep umami richness unique to the Aiyama rice variety.

The brewery is located in a naturally abundant environment along the Gion River, which flows from Mt. Tenzan, where fireflies dance on summer nights. The brewing water is medium-hard, iron-free, and moderately mineralized—an essential factor in creating sake with a full, savory body and rich flavor.

The brewery produces three main brands: “Tenzan,” its general distribution label; “Shichida,” a store-exclusive brand; and “Iwanokura,” available only in the Kyushu region. The name “Shichida” originates from the brewery family’s surname.

In earlier years, brewing was led by the “Hizen Toji” guild based in Karatsu, Saga Prefecture. The founder’s grandfather-in-law also served as a toji (master brewer), giving the family a deep historical connection to this proud brewing tradition.
