Part of Senkin’s recent focus, the Organic Nature series uses rice grown without pesticides and under natural farming methods, preserving as much of the grain’s original character as possible, with minimal polishing. In today’s climate of increasing health-consciousness, authenticity, and declining rice yields, this approach is widely seen as a future standard.

The 2025 edition of Doburoku continues the tradition of returning to sake’s origins. True to its name, it draws out the inherent strength and flavor of rice, refined through Senkin’s expertise, resulting in a smooth and natural drinking experience.
