Description

Type II is an unpasteurized sake with fine lees (origarami). The delicate lees impart a creamy texture, making the entry softer, while a gentle effervescence carries the palate smoothly into an elegant finish—showcasing the consistently high quality of the Modern series.

While respecting, preserving, and evolving the Edo-period brewing method “kimoto,” which should be passed down to future generations, Senkin reinterprets it through its own modern style. Centered on the theme of “Returning to Edo,” this new brand focuses on “agriculture,” “technique,” and “philosophy.” The renewed Modern series fully adopts kimoto brewing, bringing together all elements of the Modern concept into a unified expression.

The brewery states that the new Modern series has completely transitioned to kimoto brewing, consolidating all of its core principles. Freshly pressed sake is bottled immediately, and both seasonal namazake and pasteurized versions are released. “Edo-kaeri” (returning to Edo) symbolizes looking toward the future from the past, returning to the essence of everyday life. Through the study of Edo-period texts, the brewery revives traditional methods, without clinging to distinctions between old and new, instead valuing what is truly good and embracing a philosophy of brewing in harmony with nature.

As a traditional natural-style brewery, Senkin adheres to kimoto brewing for all its sake and does not use any additives such as enzyme agents, regardless of whether labeling is required. The phrase “The cry of a crane in the deep valley is heard in the heavens” symbolizes that true value, even if hidden, will eventually be recognized.
