Description


This sake, packaged in a transparent bottle, is specifically crafted to be enjoyed with meals. It has a lower alcohol content and is lighter and more refreshing compared to the usual Ouroku. The bitterness and sake aroma are relatively mild, making it perfect for food pairing, just as intended by the brewer.

Over the past 20 years, it has gone through a complete life cycle. The initial batch was brewed in a small tank. It was during the era of "Tanrei Karakuchi" (light and dry) sake, which was heavy and had a complex mouthfeel, with a strong assertive character. That was the first sake I ever brewed.

After 20 years, each year's fermentation became wilder, and I had to go through numerous trials and adjustments. From the fermentation stage, Jodai (the brewer's name) insisted on expressing a strong personality that gradually evolved into the present taste.
