As time passes, a fuller richness gradually emerges, adding layers and achieving an exquisite balance between depth and lightness. The finish is comfortable and long-lasting, making this a well-structured, highly complete limited release.

From the renowned sake “Nito,” brewed in Okazaki City, Aichi Prefecture, comes this year-end and New Year limited edition, the Zodiac Label. Each year features a new label design and brewing specification, making it a highly anticipated ultra-limited release. The 2026 zodiac is the Horse, and the label charmingly depicts two rabbits riding a carousel horse, creating a playful and festive atmosphere.

This year’s edition uses the sake rice varieties “Manzai” and “Yamada Nishiki,” both polished to 55%, and is brewed as a freshly pressed Junmai Ginjo nama genshu. The distinctive character of Manzai intertwines with Yamada Nishiki—regarded as the classic king of sake rice—to create a deep, layered flavor and fresh aroma that can only be experienced in this bottling, combining richness with the lively energy of new sake.

This is an excellent sake to enjoy at the very beginning of the year, filled with anticipation and joy. Released in limited quantities, it is not to be missed.
