On the palate, it is light and smooth, with a gentle, soft entry that reveals mild umami. The ginjo aroma is subtle and elegant, while the bubbles are naturally fine, providing a refreshing lift. The overall profile flows seamlessly like a smooth arc, achieving a beautifully balanced expression.

Mori no Brewery specializes in crafting sparkling sake, using only organically grown “Nanatsuboshi” rice from Rankoshi, Hokkaido. Rooted in the local natural environment, every step—from ingredient selection and brewing design to maturation and final expression—is approached without mass production in mind. Each bottle is treated as a work of art, aiming for delicate bubbles, clarity, and a style that resonates harmoniously with food.
