Compared to UPAS from the same lineup, it has a more expressive and bold character—one that may divide opinions, but for those it resonates with, the experience is profoundly rewarding.

Mori no Brewery specializes in crafting sparkling sake, using only organically grown “Nanatsuboshi” rice from Rankoshi, Hokkaido. Rooted in the local natural environment, every stage—from ingredient selection and brewing design to maturation and final expression—is approached without mass production in mind. Each bottle is treated as a work of art, pursuing fine bubbles, clarity, and a style that harmonizes beautifully with food.

Described on the brewery’s official website as a creation imbued with the “memory of flames,” it contrasts with the serene imagery of snowfall. The land of Rankoshi is shaped by powerful natural energy, inspired by the Niseko volcanic range formed around two million years ago—giving birth to “APE.” Through bourbon barrel aging, it evokes flame-like intensity and delivers a richly layered, lingering finish.
