For the 2026 brewing year, Toji Shibata employed more precise temperature control during the early stages of fermentation together with careful management of yeast activity. Even when working with Yamada Nishiki, which can be relatively difficult to dissolve during fermentation, he successfully created a sake with more pronounced aromas and a beautifully balanced body. The result combines elegant fruitiness, a soft mouthfeel, and a crisp, clean finish. It is an excellent choice as an aperitif or paired with refreshing dishes such as chilled somen noodles and Japanese-style simmered summer vegetables. Best served well chilled to fully appreciate the fresh and invigorating character of this Junmai Daiginjo created especially for midsummer.
