Kaze no Mori Challenge Edition Hinohikari 507 is an experimental, one-time-only limited release from the highly acclaimed Kaze no Mori brand of Gose City, Nara Prefecture. Created using table rice deeply rooted in the local terroir of Nara, the sake was brewed to a special specification not found in the brewery’s regular lineup in pursuit of entirely new flavor possibilities. It uses specially cultivated Hinohikari table rice grown within Nara Prefecture and polished to 50%. Hinohikari is a variety developed by crossing Koshihikari with Koganebare and is also officially designated as a recommended cultivar in Nara, where it is widely grown. The specially cultivated rice used for this release is produced with pesticide and chemical fertilizer usage reduced to less than 50% of local conventional standards, balancing environmental responsibility with careful quality control.
