This sake follows the same flavor vision as the beloved “Dajyu Romain”—rich yet balanced with acidity—offering a calm and reassuring taste profile. Ideal as a table sake, it pairs effortlessly with meals, often leading to a glass being refilled without notice. Nurtured by the four seasons and natural surroundings of Nango in Fukushima, its gentle aroma and flavor mellow further with time. Locals often say: “Drink this sake, it’s delicious!”, with “dajyu” being a friendly dialect expression that reflects the warmth of both land and people.

Best enjoyed at room temperature to warm, though it also reveals different charms when chilled or heated. After opening, its taste softens and rounds over two to three days, making it a pleasure to savor slowly from a 1.8L bottle.

“Roman Junmai Ginjo Nikaibi” is the only double-pasteurized expression in the Roman series. Until the 2022 brewing year, it was sold under the name “Dajyu Roman Junmai Ginjo Nikaibi,” before being renamed and reintroduced from 2023BY onward.
