Juyondai Junmai Ginjo Nakadori Banshu Yamada Nishiki can be described as a luxurious Japanese sake that fully showcases its delicious qualities. It emits an incredibly fruity and refreshing aroma, and upon tasting, one can experience the sweetness of the rice and the rich ginjo flavor. This sake has undergone low-temperature aging, filling the mouth with the flavors of rice, acidity, and sweetness, making it exceptionally refreshing to drink. It can be considered a top-quality sake.

In the process of sake extraction, it is divided into three stages: "Arawari" (first press), "Nakadori" (middle press), and "Oshikiri" (last press). Firstly, bags containing moromi are gradually stacked and compressed from the top to extract the moromi. The initial liquid that comes out of the bags is called "Arawari," which has a lower alcohol content and presents a clear appearance. In the "Tsuki" stage (referring to the stage where the liquid flows out of the bags), the liquid is called "Nakadori," and the final extraction is referred to as "Oshikiri." In essence, "Nakadori" refers to the refined liquid obtained by removing the initial and final parts during the moromi extraction process.
