The sake is a Daiginjo of the highest quality, made by carefully polishing "Yamada Nishiki" rice to 35% and maturing it at icy temperatures. It boasts a fresh and refreshing fragrance, reminiscent of elegant fruits and rice koji. The elegant fruity sweetness and flavor make it the finest among the fourteenth generation's offerings.

This distinguished Daiginjo sake was awarded the Silver Prize in the "Daiginjo" category at the renowned "SAKE COMPETITION 2019," the world's largest Japanese sake competition. The name "Soukou" comes from the combination of the two rainbows. It is brewed using the "Shichisui Niju-Kan" method, where "Niju-Kan" refers to 20 "Kan," with each "Kan" being 75 kilograms. "Shichisui Niju-Kan" is an incredibly rare sake that can only be extracted from 7 drops of sake from 75 kilograms of rice. This sake is released as a limited edition every November.
