In response to the increasingly challenging conditions surrounding sake rice cultivation in recent years, this special release was created as a new initiative to support rice farmers and ensure they can continue cultivating with confidence. Rice grains that would normally be classified as off-grade simply due to their smaller size during the selection process are instead carefully re-evaluated through more refined sorting methods, preserving their inherent quality. These slightly smaller polished rice grains (A-grade off-spec rice) are then meticulously selected and used in brewing. This sake is a heartfelt creation, entrusted especially to those in the food and beverage industry who truly love sake, value every glass, and present it with care to their customers.
