Released under the CWS (Concept Workers Selection) label, Hiraizumi Sour Boy Junmai Ginjo Nama is a limited-edition arrival from Hiraizumi Honpo in Akita Prefecture. Conceived by the brewery’s 27th-generation owner, who is only 37 years old, this sake embodies a new vision of “Tradition and Innovation.” Among sake enthusiasts, Hiraizumi is a legendary name. Founded in 1487 during Japan’s Muromachi period, it is the oldest brewery in the Tohoku region and the third-oldest in Japan, boasting a history that stretches back over five centuries.

The name “Hiraizumi” refers to exceptionally pure, crystal-clear water, while the brewery’s defining characteristic is its long-established Yamahai brewing method. This traditional technique produces sake with remarkable depth, stability, and a structure that remains engaging over time. Once producing several thousand koku annually, the brewery now maintains a carefully controlled production of approximately 800 koku, led by Masaki Saito and a young brewing team. While preserving the heritage of Yamahai craftsmanship, they are equally committed to creating new flavor experiences and sake styles worthy of being passed on to future generations. Guided by the belief that true distinction comes from pursuing a style no other brewery can replicate, they created this remarkably fresh and innovative expression.
