Using the ancient "Mizumoto" brewing method, it exhibits a unique lactate flavor and deep fermentation character, providing a new experience for lovers of natural and distinctive sake.

"Mizumoto" originates from the "Bodaijō" technique from Nara temples during the Muromachi period. By soaking raw rice in water, it promotes natural lactic acid bacteria growth, increasing acidity and ensuring stable fermentation. This method requires no added yeast, relying entirely on natural microbes, resulting in a rich fermentation flavor.
