Paired with Yamagata summer specialties such as Dadacha-mame edamame and rock oysters, it beautifully enhances both the sake’s freshness and its seasonal character. Combining elegant aromas, delicate umami, and excellent food-pairing versatility, this is a classic summer sake.

This summer-limited Junmai Ginjo is brewed using “Dewa Sansan,” a premium sake rice from Yamagata Prefecture, creating a soft, delicate, refreshing, and crisp summer style. It is one of Fumotoi Shuzo’s signature summer releases, developed as part of the brewery’s pioneering efforts in seasonal summer sake since 2011. Brewed using the traditional Kimoto method together with Yamagata yeast, it retains a moderate Ginjo fruitiness, gentle sweetness, and smooth mouthfeel. At the same time, its 16% alcohol content preserves the satisfying depth and umami expected from a Junmai Ginjo, ensuring that its refreshing summer character does not come at the expense of complexity.
