Description


This sake may have been brewed using wine yeast, which gives it a slightly bitter taste, reminiscent of wine. However, amidst the spiciness, there's a rich acidity that makes you realize it's actually sake.

This "Snake Eye" is a limited edition, unfiltered and unpasteurized sake made by polishing the rice from Dewanosato in Yamagata Prefecture to 50% and fermenting it with wine yeast. The label and bottle design are quite unconventional, as it comes in a 1.5L bottle, unlike the usual one-liter size. The fermentation temperature for sake yeast is around 720℃, whereas for wine yeast, it is around 1012℃.
