Created through the collaboration of seven prestigious breweries in Miyagi Prefecture, DATE SEVEN is an exceptionally limited annual project. For the 2026 Season II Episode 5, Yamawa and Koganesawa serve as the two lead breweries. This expression represents the Yamawa Style – Clear White edition.

Guided by this year's concept, "All Miyagi, Taking on the World," the sake is crafted exclusively with ingredients sourced from Miyagi Prefecture. Gin no Iroha is used as the koji rice, while Kura no Hana serves as the kake rice, paired with Miyagi yeast. Every element has been meticulously selected to achieve exceptional clarity, purity, and precision, showcasing Miyagi's continued pursuit of world-class sake craftsmanship.

The label artwork draws inspiration from the classic lion dance motif and the iconic polka-dot crest featured on the battle surcoat of the legendary samurai Date Masamune. The Yamawa Style – Clear White edition portrays the white-haired parent lion, symbolizing quiet authority, noble character, and the sake's refined, crystalline elegance.

The DATE SEVEN series is highly sought after every year and frequently sells out during the pre-order period. It is also recommended to enjoy this release alongside the companion Koganesawa Style – Brilliant Red edition to experience the distinct personalities and craftsmanship of both expressions.

This collaborative brew brings together the expertise of seven renowned Miyagi breweries. Rice polishing was jointly undertaken by all participating breweries, while rice washing was carried out by Niizawa Sake Brewery. Hagino Shuzo oversaw koji production, Katsuyama Shuzo prepared the yeast starter, Saura managed the moromi fermentation, and Suminoe Shuzo completed the final pressing, resulting in a masterpiece that embodies the collective excellence of Miyagi's brewing tradition.
