Brewed in the authentic ginjo-zukuri style, this sake combines brilliance with subtle smoothness, delivering an elegant and refined experience. Made from the historic rice variety Kinmon Nishiki and Kyokai No. 9 yeast, it challenges early “ginjo” brewing techniques—methods that can be considered the prototype of modern ginjo-making. Daishinshu undertakes this special brew annually to hone and refine their craft.

Rather than relying on modern aids like enzyme agents or specialized koji, Daishinshu intentionally avoids shortcuts, choosing to learn from the wisdom of brewers in the Meiji era who overcame challenges with hard rice using ingenuity alone. This pursuit reflects their philosophy: “Don’t drift with the tide; don’t take shortcuts.”

“Tsukurikatamenase” is the crystallization of Daishinshu’s skill, aesthetics, and passion.
