Despite its luscious impression, a sharp dryness cuts through to create exquisite contrast. The clean, crisp finish leaves a lasting impression.

From Daishinshu of Matsumoto, Nagano, comes this limited release “Okite Yaburi” (rule breaker), bottled unpasteurized from the fune-pressing. Using Kinmon Nishiki polished to 49%, it breaks the brewery’s long-held rule of bottling from a single tank, instead blending two tanks to pursue ultimate flavor balance. A remarkable and standout sake of exceptional completeness.
