Description
This profound umami gently envelops the acidity of the plums, creating a rounded and harmonious balance of flavors without the need for excessive sugar. Upon release, “Kimoto Umeshu” swept first prizes in major liqueur competitions and was quickly adopted by Michelin-starred restaurants around the world, earning exceptionally high acclaim.

With the ambition to create an ultimate umeshu unlike anything else on the market, Daishichi’s first liqueur, “Kimoto Umeshu,” was born from this uncompromising pursuit. To ensure consistently top-quality plums over the long term, large Nanko ume are carefully selected from Wakayama Prefecture, the primary production region. Naturally, the base alcohol could not be ordinary neutral spirits, but had to be sake brewed using the traditional Kimoto method. After experimenting from scratch with a wide range of sake, the final choice was a Junmai Kimoto Genshu that can truly be described as “the ultimate umami.”
