Brewed exclusively with 100% Yamada Nishiki from Hyogo Prefecture’s Special A–designated areas and matured thoroughly, this sake offers a deep, concentrated profile with a powerful sense of umami that surges forth the moment it touches the palate. Just as the world of wine embraces both fresh, aromatic white wines and rich, profound red wines, the world of sake should not be limited to fragrant Daiginjo styles alone. It must also include premium expressions that emphasize umami and body. This philosophy is precisely what Daishichi defines as “Premium Junmai Sake.”

By establishing the category of “Premium Junmai Sake,” Daishichi challenges conventional assumptions. Have we unconsciously come to view sake as a pyramid topped by Junmai Daiginjo, assuming that the closer a sake is to the Ginjo style, the better it must be? Is a “good Junmai sake” expected to resemble a Junmai Ginjo? Daishichi takes a fundamentally different stance. This is not an imitation of the Ginjo style, but an orthodox Junmai sake that stands firmly on its own, pursuing the true essence of rice-derived umami.
