Description

Under normal circumstances, raw sake, as it hasn't undergone heat treatment (pasteurization), continues to evolve due to the ongoing enzymatic action of the koji. Especially, sweetness tends to gradually increase, becoming cloying. However, this sake has a higher acidity, so even after a long time, the balance is not easily disrupted.

Therefore, although the NO.6 series typically recommends consumption within three months of shipment, this sparkling sake is an exception. Despite having matured for a long time, now is the best time to enjoy it.

Although the preparation took some time, we are finally able to introduce this charity sake, "No.6 RS-Type," to support the ongoing earthquake relief efforts in Taiwan. This is a particularly special sake within the NO.6 series.

This sake is brewed with rice from 2021, and although it belongs to the raw sake exclusive series "NO.6," it underwent a rare long-term aging.

This is because this raw sake is a lightly cloudy sparkling sake. As the yeast inside the bottle remains active, maintaining its reduced state, it avoids the unpleasant "raw sake" taste. This "raw sake" taste smells like a summer insect box.
