Description


In terms of character, this sake presents a wild and complex interplay of acidity and umami, with aromas carrying hints of fermentation, lactic notes, and deep rice fragrance. The palate is full-bodied with a clearly defined structure, and the finish is long and taut. Strongly individualistic and highly experimental, it fully embodies Aramasa’s philosophy of “natural” and “one-of-a-kind.”

This was the third release in Aramasa Shuzo’s 2018 “The Wonderful World of Junmai” series, themed “Yeast-Free Bosatsumoto.”

“Bosatsumoto” is a special starter method developed by Aramasa, inspired by classical kimoto and yamahai techniques, but with a greater emphasis on the spontaneous action of natural microorganisms and native yeasts within the brewery. This sake is brewed without adding any yeast, relying solely on the ambient microflora of the environment and brewery itself. It is an extremely difficult and challenging brewing method, resulting in a truly unique expression.
