Description

The sake exudes citrus aromas of yuzu, with hints of herb and nutmeg spice. The high acidity and dissolved gas bring a refreshing quality, while the complex umami and slightly bitter aftertaste are also noticeable. This is a slightly dry sake that pairs exceptionally well with herb-seasoned roast chicken.

Since its launch in December 2021, "Ubusuna" from Hananoka Sake Brewery has caused a sensational stir in the world of Japanese sake. This is the first summer limited edition released. Unlike the previous "Ubusuna" flavors, this sake showcases high acidity and the complex umami brought by Hozo, guided by natural lactic acid bacteria, while incorporating ancient Kimoto traditional techniques to deliver a fresh and rich mouthfeel. Launched in January 2022, this sake, which exemplifies a unique character reminiscent of sparkling wine, is named "Kawamatsuri" to embody the spirit of ancient Japanese agricultural rituals.

The effects are exceptional. Through tasting this sake, we can genuinely sense that Ubusuna is steadily opening a new door in the Japanese sake industry. Recently, a researcher from an agricultural research institute expressed excitement upon learning about Ubusuna: "You must introduce it to me!" This "story-driven" approach, along with producers' relentless pursuit of quality, is sure to have a positive impact on the future global market.
