Brewed using the traditional Edo-period kimoto method, this new “Modern” expression delivers a supple, water-like smoothness on the palate, while neatly integrating an ideal level of complexity into a clean, refined structure, allowing the drinker to fully enjoy its balanced and delicate flavor profile.

This marks Senkin’s first full brand renewal in 20 years—“Edo Return (Edo-gaeri).” The concept is rooted in respect for, preservation of, and evolution from the Edo-period brewing method kimoto, which has been passed down through generations. Building upon this foundation, Senkin reinterprets and modernizes the method in its own way, arriving at this philosophy through hands-on brewing practice. Walking alongside nature and the Edo-era master brewers, Senkin seeks to connect the “beautiful landscapes” born from sake brewing to the future. Edo-gaeri represents a return to everyday pursuit under the banner of “the future envisioned from Edo.” “Tsuru naku kyū kō koe ten ni kiku” — even from a deep mountain valley, the cry of a crane can be heard in the heavens. This reborn modern style is produced entirely using the kimoto method, incorporating all contemporary elements; with identical ingredients and techniques, it is expressed in four different forms. Freshly pressed sake is bottled directly, released as seasonal limited nama (unpasteurized) and pasteurized versions. “Zero-Type” refers to the nama version.
