Soft banana-like sweetness drifts gently, accompanied by a refreshing cedar fragrance, creating a delicate and pleasant aroma. Fine bubbles bring a refreshing entry, with layers of umami, acidity, and sweetness weaving together into a complex, multi-layered tasting experience. The cedar character adds coolness and blends beautifully with the acidity, forming a lively impression. Sweetness and umami dance within the sharp outline, achieving an exquisite balance. Gentle tannins from the wooden barrel add charm, the finish is clean and elegant, and it fades away with a crisp, refreshing conclusion.

Born near Miwa Shrine in Nara, a land rich in ancient history, “Mimurosugi” presents this limited release from its traditional-technique-focused series “Kioke Bodaimoto.”

This time’s theme is “A cross-era collaboration of monastic brewing traditions.” Using the Bodaimoto method born in 15th-century Nara temples, combined with the Champagne method developed in 17th-century French monasteries, this sparkling sake is crafted as an authentic expression of Japanese sake effervescence. Made with Nara-grown Yamada Nishiki, it is brewed in wooden barrels using the Bodaimoto starter, bottled together with natural lees, then undergoes in-bottle secondary fermentation. Finally, disgorgement is performed, resulting in a dry, refreshing, and energetic style.

This is a rare creation that only Mimurosugi—deeply versed in wooden-barrel brewing—could achieve. Because the process is extremely labor-intensive, production is very limited. Enjoy this sake that embodies the philosophy of the brewery.
